Watermelon Mimosa
Ingredients:
1 quarter of a large watermelon, about 5 cups cut in small pieces
Juice from 6 oranges, about 2 cups juice
1 bottle of chilled champagne, cava, prosecco or other sparkling wine
Sugar to taste, based on sweetness of the fruit
Mint to garnish
Preparation:
Blend the watermelon chunks with the orange juice and sugar to taste until you have a smooth pure, strain if needed.
Chill the watermelon orange mix in the refrigerator until ready to prepare the drinks.
Pour the watermelon orange mix into champagne flutes, about half full.
Add the champagne or other sparkling wine, pouring it gently to avoid from making a bubbly mess.
Stir lightly and garnish with a fresh sprig of mint.

Watermelon Mimosa

Ingredients:

  • 1 quarter of a large watermelon, about 5 cups cut in small pieces
  • Juice from 6 oranges, about 2 cups juice
  • 1 bottle of chilled champagne, cava, prosecco or other sparkling wine
  • Sugar to taste, based on sweetness of the fruit

Strawberry Margarita Jell-O Shooters
Strawberry Prep:
Cut the bottoms of the strawberry flat to get them to stand upright. When you do so, make sure that you do not cut off so much that there is a hole at the bottom.
Use a huller or apple corer to empty out the strawberry. 
Once the strawberries have been emptied, use a towel to pat the outside of the strawberries dry.
Check each strawberry and make sure there is not a hole in the bottom before you start filling.
Margarita Mix
1 box Strawberry Jell-O
4 ounces tequila, preferably reposado or blanco
2 ounce Cointreau
Salt for garnish
Instructions
Boil one cup of hot water in a saucepan,  then add in Jell-o powder and whisk until powder is completely dissolved, about 2  minutes. Set aside.  Measure out 1/4 cup of cold water and set aside.
Combine tequila and Cointreau, in cocktail shaker filled with ice. Add liquour mixture to cold water and stir to combine. Then add cold liquour mixture to hot Jell-o mixture and stir to combine. 
Pour final Jell-o mix into strawberries and chill overnight. Dip  your finger in water or use a moistened brush to wet the edge of the strawberries, dip and rotate the strawberries in salt to rim. Garnish with cut lime triangles to finish.

 1 small seedless watermelon, red or yellow, quartered and cut into 1-inch-thick wedges
 1 cup sugar
 3/4 cup water
 1/2 cup tequila
 1/4 cup Triple Sec
 2 limes, halved or cut into wedges
 Flaked sea salt or coarse salt
Directions: 

Arrange watermelon in a single layer in two 9-by-13-inch  baking dishes. Bring sugar, water, tequila, and Triple Sec to a boil in a  small saucepan. Cook, stirring, until sugar dissolves, about 1 minute.  Let cool slightly. Pour syrup over watermelon wedges, and refrigerate  for at least 45 minutes.


Remove watermelon from syrup, and arrange on a platter. Squeeze limes over melon, and season with salt.
